I like my chicken salad with much less mayo than the standard recipe, but I adjust accordingly. It’s recommended to boost the mayonnaise to 2/3 cup to achieve a rich and creamy texture in the chicken salad.

For me, chicken salad improves with time in the fridge. Therefore this recipe was developed with the idea that it would be delicious even after two days in the refrigerator.

  • 1 lb Chicken slices
  • Massive Tomatoes, Sized 2
  • one medium onion
  • Two or three green peppers
  • One red pepper in half
  • One garlic clove
  • Parsley and mint (optionally purple basil)

  • Three tablespoons of olive oil.

  1. Put the chicken breasts in a large pot or pan, and then pour cold water over them until they are covered by approximately an inch. Salt should be added to the water.   2. Adjust the temperature to medium and keep it there until it achieves a low boil. After that, turn the heat down to a low setting and cover the pan. Allow the chicken to cook over low heat for eight to twelve minutes or until the internal temperature reaches 160 to 165 degrees Fahrenheit. Take the chicken out of the oven and let it sit for a few minutes before serving. Then put it in the refrigerator to chill.
  3. Place the chicken once it has cooled down on a chopping board and cut it into pieces that are half an inch in size.
  4. Prepare the celery, green onion, grapes, parsley, and tarragon by dicing and slicing them. Together with the mayonnaise, Dijon mustard, and lemon juice, these ingredients should be put into a bowl and mixed. Add a little salt and pepper before serving.
