Ingredients

For the Wings

You will need 1 pound chicken wings and to remove the drumsticks and deboned wing.

For the Glaze

  • ¼ cup fish sauce
  • ¼ cup brown sugar
  • 1 sliced jalapeno

For the Filling

  • ½ cup glass noodles
  • 8 chopped cilantro stems
  • 4 shiitake mushrooms ( dried and soaked in some hot water to get softness)
  • 3 cloves garlic
  • ½ pound ground pork
  • 1 teaspoon black peppercorns
  • 1 sliced green onion
  • ⅓ cup grated carrot
  • 1 ½ teaspoon fish sauce
  • 3 teaspoon oyster sauce
  • 1 ½ teaspoon sugar
  •  3 teaspoon soy sauce

Directions

For the Glaze

  • Take a saucepot and mix all ingredients for 15 minutes on medium heat. Then give a consistency that looks like syrup.

For the Wings

  1. First, you need to soak the glass noodles. It is for 10 minutes in hot water to get soft noodles. Then it’s time to strain the noodles and cut them into ¾ inch pieces.
  2. You need to remove the mushrooms from warm water before squeezing out extra water. Now dice them after removing stems.
  3. Now grind the peppercorns and add cilantro stems, garlic, and pound in a paste.
  4. Take a mixing bowl to combine ground pork, garlic paste, grated carrot, glass noodles, shiitake mushrooms, green onions, fish sauce, oyster sauce, sugar, and soy sauce. To get a good mixture, use hands to knead them along.
  5. It's time to stuff the wings. You need to push the filling in carefully to ensure the air pockets are closed. Keep the prepared filling flush with the wings so that the wings may not shrink while cooking and the feeling can not seep out.
  6. After filling all the wings, you need to line the wings up. Take a prepared sheet tray and line them up. You need to brush the wings with the glaze to bake for 12 minutes. Then you can baste with more glaze to bake for more than 5-7 minutes.
