Ingredients: 4 servings

FOR MARINATION:

  • 1/2 cup coconut cream
  • two cloves, garlic
  • salt (to taste)
  • 500 g chicken breast
  • one tablespoon white wine vinegar
  • 1/4 teaspoon black pepper

FOR THE COATING:

  • one cup almond flour
  • one tablespoon sour cream
  • one teaspoon oregano
  • 25 g Parmesan cheese
  • 1/2 teaspoons paprika
  • 1/4 teaspoon onion powder
  • cayenne pepper (optional)
  • one egg
  • kosher salt (to taste)
  • 90 g pork rinds
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder

Directions

  • Cut the chicken breasts into pieces.
  • Add coconut cream, garlic, vinegar, black pepper together in a bowl.
  • Coat the pieces into the mixture and freeze them for two hours or more.
  • Bake the oven to 425 degrees F temperature.
  • Beat the egg in a bowl.
  • Make a mixture of pork rinds, Parmesan cheese, garlic powder, onion powder in another bowl.
  • Add black pepper, oregano, and pepper to the mixture.
  • Coat the chicken nuggets in the almond flour mixture. And then egg and pork rind mixture.
  • Put them in the baking tray and start baking.
  • Cook the nuggets for 20-15 minutes.
  • You can bake more time for more crunchiness.
  • Serve them warm.
