Step-3: Warm up stock and keep it hot.

Step-4: Put oil in a large, heavy saucepan with a nonstick bottom and heat it on medium. Add the onion and cook it for a minute, then add three and a half cloves of garlic. These should be cooked together for a few minutes or until they are soft.

Step-5: Stir the rice all the time to keep it from sticking and warm it up.

Step-6: Add one spoonful of hot stock at a time, ensuring all of the liquid is mixed before adding more. When you add stock for the second time, add the chopped carrot. Then add the rest of the vegetables. Stir it constantly and carefully to make sure it doesn't get lumpy,

Step-7: Keep adding stock and string for 25–30 minutes until the liquid is absorbed and the rice is done. Then add the rest of the mushrooms, spinach, and cheese and stir them in.

  • 1 pound sliced mushroom
  • One tablespoon unsalted butter
  • 1 teaspoon Black pepper
  • 1 cup Chopped Onion
  • Two cloves garlic(minced) or one teaspoon of garlic powder
  • One teaspoon of dried thyme/oregano leaves
  • Three tablespoon Olive oil

Cooking Directions

  • Heat the air fryer to 390 degrees Fahrenheit for about 10 minutes before cooking. Once hot, add one tablespoon of butter and cook until melted.
  • Add 1 cup chopped onion and two minced garlic cloves (or garlic powder). Cook until soft but not browned.
  • Add one teaspoon of dried thyme or oregano leaves if desired. Cook another minute while constantly stirring so they don't burn on the bottom of your pot or pan where there is less liquid than elsewhere on its surface area due to evaporation during the cooking time frame (about 5 minutes total). These spices are optional but recommended if you want a unique flavor kick.
  • Add 1 pound sliced mushrooms (stems removed) along with three tablespoons olive oil.
  • Sauté until browned for couple of minutes.

  • One egg, beaten
  • ¼ cup flour
  • ¼ cup unseasoned bread crumbs

Cooking Directions

  • Melt the butter in a saucepan.
  • Auté the onions for two minutes, then add the garlic.
  • Stir for five minutes more until the onions begin to caramelize.
  • Add the cooked white beans and cook for another three minutes, occasionally stirring—season with salt and pepper.
  • Stir the white wine until it evaporates. Add broth 1/3 cup at a time, stirring until the rice absorbs each addition. Adding the broth takes 15-20 minutes.
  • Add Parmesan, lobster & shrimp. Spread cooled risotto on a large sheet pan.
  • Preheat the Air fryer to 400°F.
  • Combine bread crumbs, flour, and extra virgin olive oil in a mixing dish.
  • Beat eggs in a bowl. Form 2-tablespoon risotto balls.
  • Dip risotto balls in eggs, then panko.
  • Working in batches, sauté the balls until golden brown and crispy, about 10 minutes.
  • Serve it with marinara sauce

Recipe-4: Butternut Squash and Corn Risotto

  • One butternut squash
  • Three ears of corn (or 2 cups frozen corn)
  • 1/2 cup olive oil, divided into two tablespoons and one tablespoon portions
  • Two tablespoons butter, divided into 1/2 tablespoon and one tablespoon portions
  • 3/4 cup chopped onion or shallot
  • Four cloves garlic, minced

Cooking Directions

  • Cut the butternut squash into bite-sized cubes with a sharp knife.
  • Coat them with two tablespoons of olive oil and season them with salt and pepper to taste.
  • Transfer the squash to an air fryer basket; add it to your air fryer.
  • Set at 400°F for 25 minutes until fork tender.
  • In a large saucepan over medium heat, melt the remaining butter in the remaining oil until bubbling; stir in onions and garlic for about 5 minutes until softened.
  • Add rice; cook for about 30 seconds until coated in oil mixture before adding chicken stock (1½ cups). --- -Bring mixture to a boil while frequently stirring with a wooden spoon until liquid is absorbed by rice—this should take 10–15 minutes, depending on your type of rice.
  • Stir occasionally so that bottom doesn't burn during this time. When the most liquid has been absorbed by the rice, add another ½ cup of chicken stock; continue adding ½ cup chicken stock every 5 minutes until all has been added.
  • When rice is almost done cooking, add parmesan cheese and thyme leaves, then cover the pot with a lid allowing steam from inside the bank to come through the top holes.
  • Once all liquid has been absorbed, remove from heat, allowing risotto to rest for 10 minutes before serving hot.

Tips & Variations

  • You can substitute chicken broth for water. Wine can be used instead of water, but if you do, use a white wine you enjoy drinking.
  • If you're a pescatarian, sub veggie broth for chicken.
  • Not a lover of scallops? Substitute prawns for the chicken.
