  • Potatoes
  • Chicken
  • trimmed 2 pints cooked chicken breast (or 3/4 pound cooked chicken breast or tenders) 2 teaspoons paprika
  • 1 teaspoon cayenne pepper
  • Sliced scallions  ¼ cup
  • Flat-leaf fresh 1 tablespoon
  • 1 teaspoon dry mustard

  • 3/4 cup water
  • 2 cups milk
  • 1 cup all-purposeflour
  • 1/4 cup olive oil
  • Lemon juice 1 tablespoon

Instructions

Step 1:

Place the potatoes in a pan, shell them with just enough water to cover them, and then set the pot aside. Take the potatoes to a boil over medium heat, add plenty of salt and cook until they can easily be pierced with a thin skewer or sharp knife about 15 minutes.

Step 2

Drain and move the potatoes to a cutting board. Let the potatoes cool forat least five minutes, or until cool to the touch, then slice them intobite-sized slices.

Step 3

While the potatoes are boiling, place a rack in the center of the oven and preheat to 400 degrees. Toa large baking pan with a rim, add about 2 tablespoons of olive oil.

Step 4

Slice the chicken into slices about one to one and a half inches thick. Mix the cheese, egg, plain breadcrumbs, garlic powder, onion powder, cumin, and cayenne until well combined. Add the mustard to a small, shallow bowl.

Step 5

Ensure the chicken pieces are softly coated with the mustard. Once individually piece is coated with the bread crumbs, press them into the mixture. The coated chicken should be placed on the oiled baking sheet. Repeat the procedure with the remaining chicken, ensuring no pieces touch each other.

The nuggets should be roasted for 15 to 20 minutes, or till pieces are golden brown and record 165 degrees on an instant-read thermometer.

Step 6

Once the chicken is baked in a big pot, mix the olive oil, tahini, lemon juice, and pepper until blended.Add the parsley and mix until well combined. Sprinkle the scallions and potatoes into the bowl and gently toss in the dressing. Taste the mixture and adapt seasonings.

The best way to serve chicken and potato salads is at room heat or warm, but not cold.

How to prepare?

Wash and peel the potatoes and dice. Lay them out in a particular layer on a baking sheet. Sprinkle with salt and black pepper. Warm the oven to 425F degrees, and place the potatoes onthe middle shelf. Bake the potatoes for 40 to 50 minutes, or until crispy andgolden brown. While the potatoes cook, put the chicken into a bowl. Whisk together the mayo, tahini, lemon juice, and cilantro in a small bowl. Spoon half of the mayo mixture into the bowl of chicken. Mix until well blended. Addthe potatoes and chicken into the bowl with the mayo. Mix until well blended. Put the combination into a blender and puree until you have a smooth, creamy sauce. Pour the sauce back into a bowl. Slice the chicken into minor chunks and add the pieces to the potato salad. Toss well and then serve.

Why I love this dish

I have a tradition of bringing hummus and pitas for picnics and dinners at home. One of my favorite ways to make my hummus is with tahini. It makes a creamy, slightly spicy sauce with the perfect texture. I use tahini in this baked chicken recipe too.
