Directions

  • Mix the tomato, onion, cilantro, lime juice, salt, and Pepper to taste in a small bowl to make Pico de Gallo.
  • Mix the chicken, orange juice, lime juice, garlic, cumin, and chiles that you have drained in a large bowl for the Quesadillas. Mix everything well.
  • Put one-quarter of the chicken mixture (almost 3/4 cup) on a work surface's bottom third of a tortilla. Each one gets two tablespoons of cheese. The edge closest to you should be lifted and wrapped around the filling. Next, fold the left and right sides toward the middle and keep rolling until you have a tight cylinder. Put the seam side down and set it aside. Do the same with the rest of the tortillas and filling.
  • Set the air fryer's temperature to 400°F.
  • Oil all sides of the Quesadillas with a light spray. Put two Quesadillas seam sides down in the air fryer basket. Put 1/3 cup of the chicken mixture and a heaping tablespoon of Mexican cheese in the middle of each tortilla. To make a quesadilla, fold the top and bottom of the tortilla over the filling and roll it up. Spray cooking spray on the food and put it in the basket of an air fryer.
